Mashed Yucca & Boniato with Chimichurri Sauce

Directions

1. Trim ends from yucca & peel remainder. Cut into 3 inch pieces & boil in salted water to cover by 2 inches until tender and starting to fall apart, about 50-75 minutes.
2. Prepare boniato in the same way as yucca. Boil for only 40-50 minutes.
3. In a separate pot, scald milk, butter, & chimichurri
4. Drain yucca & sweet potatoes in separate colanders. Transfer yucca to cutting board and remove wooden cores.
5. Combine yucca and sweet potatoes in mixer with chimichurri/milk mixture, adding a little at a time.
6. Season with salt and white pepper.
